Inspired by the beloved character from The Little Mermaid, this table-service restaurant immerses guests in a coastal ambiance with its airy decor, vaulted ceilings, and nautical touches. It’s the perfect spot to unwind after a day of travel or poolside relaxation.
A Family-Style Feast with Caribbean Flair
Sebastian’s Bistro presents a family-style dining experience, allowing guests to share a variety of dishes that highlight Caribbean flavors.
The meal begins with warm, buttery pull-apart rolls accompanied by guava butter and caramelized onion jam, a delightful start that sets the tone for the courses to follow. Think Caribbean style Parker House rolls (for my Ale and Compass fans).
Next, the Spice Necklace Salad offers a refreshing mix of greens, spiced candied pumpkin seeds, tropical fruit, and radish, all tossed in a tangy key lime dressing.
The main course, aptly named “Taste of the Caribbean,” features a selection of oven-roasted chicken with tamarind barbecue, slow-cooked mojo pork with mango sambal, chili-rubbed beef with roasted red pepper chimichurri, and baked fish with citrus butter. These are served alongside sides like cilantro rice and beans, roasted seasonal vegetables, and candied plantains, providing a hearty and flavorful meal.
For plant-based diners, the “Harvest of the Caribbean” offers dishes such as Impossible™ kabab, fried jerk tofu, plant-based sausage, and Caribbean “fish” cake, accompanied by cilantro rice and red beans, vegetable stew, and grilled seasonal vegetables.
Sweet Endings and Tropical Sips
No meal at Sebastian’s Bistro is complete without their celebrated house-made coconut-pineapple bread pudding, drizzled with caramel sauce and served with vanilla ice cream, a dessert that has garnered rave reviews from guests.
And I am prepared to say, that it has dethroned both O’hana and Raglan Road for best bread pudding on property in my book!
To complement the meal, the restaurant offers a variety of specialty cocktails, including the Island Time Seasonal Margarita and the Pineapple Mule, as well as an extensive selection of Caribbean rums, wines, and non-alcoholic beverages.

Sebastian’s Bistro serves dinner nightly from 4:30 PM to 9:30 PM. Pricing is set at $39 per adult and $21 per child (ages 3–9), with children under 3 dining for free. Reservations are recommended, especially during peak travel seasons.
